Recipes of Layer Cakes



Recipe of Blue Layer Cakes

Ingredients :
7 egg whites
10 egg yolks
135 grams of low protein flour
25 grams of cornstarch
20 grams of milk powder
125 grams of unsalted butter, melted
150 grams of caster sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon of blue dye
5 drops of purple dye

Sheathing :
100 grams of sweetened condensed milk
125 grams of cold unsalted butter
200 grams of white cooking chocolate, melted
150 grams of condensed cream, whipped half expands

Step by step making :
1. Beat the egg yolks until lumpy.
2. Whisk the egg whites  and salt until half fluffy then add caster sugar bit by bit while whipped until fluffy. Enter the beaten egg yolks then whipped until fluffy back.
3. Add low protein flour, cornstarch, milk powder and baking powder with sifted and mix evenly.
4. Enter the mixture of melted butter, blue dye and purple dye bit by bit while stirred gently


5. Take 100 grams of dough for crumbs. Pour the dough in a small baking pan measuring 18 cm and baked with under fire 170 degrees Celcius temperature for 10 minutes until cooked and crispy then crumbs.
6. Pour remaining dough into four baking pans measuring 20 cm each and 3 cm high which have been smeared with margarine and lined with baking paper.
7. Baked with under fire 180 degrees Celcius temperature for 15 minutes until cooked.
8. For the sheathing : shake cold unsalted butter and sweetened condensed milk until flat then add white cooking chocolate and whipped until flat, finally add half expands cream bit by bit and whipped again until flat.
9. Take one of the cake and add sheathing. Put the second cake on it and add sheathing again, repeat it until the fourth cake, then rub the entire surface of the cakes with sheathing irregularly.





10. Sprinkle cake crumbs at the top of the cakes.


The Blue Layer Cakes is ready to be presented.

Lapis-Surabaya

Lapis-Surabaya is one of  Indonesia's favorite cakes that is similar to Lapis-Legit. Lapis-Surabaya made by two methods, sponge cake and butter cake. Lapis-Surabaya created consisting of three layers, different with Lapis-Legit, Lapis-Surabaya oven not layer by layer but overlaid after baked and usually glued together with strawberry jam or vanilla cream, other jam or cream can also be used in accordance with your taste.

This is some important things in making Lapis-Surabaya, step by step :
1. Shake butter or the mix of butter and margarine until tender correct then add the sweetened condensed milk, shake until smooth and shake up until the missing air out of the butter.


2. Shake the egg yolks and sugar until fluffy correct, enter wheat flour, cornstarch and milk powdered with sifted and mix evenly.

3. Pour the beaten egg yolks into the beaten butter little by little, stirring until it is completely flat, this stirring is quite difficult, therefore it is suggested that making dough is done layer by layer, from the dough of Lapis-Surabaya can be created a variety of other layer cakes.


4. Pour the dough into the baking pan and baked with under fire 190 degrees Celcius temperature for 20 minutes or until cooked.

5. Repeat to make the second layer of brown by adding chocolate powder and the third layer that is yellow which is same with the first layer.




6. Attach the three layers using strawberry jam, do not forget to cut the skin of the upper of the brown layer.




Lapis-Surabaya generally made with three layers using two colours Yellow-Brown-Yellow, but lately many peoples make Lapis-Surabaya with a single colour.

Recipes of Macarons



MACARONS

Macarons are Mini Cakes that are easy to make, simple to be presented and delicious to be eaten. Macarons prefer the taste compared with the usual trimmings which are used on the other type of cakes. Macarons use decorations rarely.

This is one of the basic recipe to make about 20 small macarons :
- 120 g of icing sugar / confectioner's sugar
- 2 egg whites or about 80 g
- 80 g of almond flour
- 60 g of castor sugar or berry sugar
- one pinch of salt or according to individual taste
- one pinch of powdered food colouring or colouring agent which can be found in specialty baking store.


Mix the icing sugar or confectioner's sugar finely with almond flour. Sift the mixture into a bowl.


Whisk egg whites into firm peaks with the salt, add the castor sugar or berry sugar and food colouring or colouring agent, and continue whisking until meringue is very shiny.


Using a spatula , stir the almond mixture with egg whites by gently lifting the paste upwards, the mixture will become much brighter and a little more liquid, be careful not to overwork the mixture to the point that it becomes completely white.


Using a pastry bag, make a small rounds on a baking tray or baking sheet which is covered with baking paper or parchment paper, spacing them evenly, let stand for one hour at room temperature.

Preheat oven, on fan-forced (convection) option, at 150' C.

Bake and cook for about 12 minutes, let the macarons cool before handling them and assemble with filling of your choice, it can be guava cream, gooseberry jam, lime cream, grapefruit cream, salted butter caramel, hazelnut cream, orange cream, lemon cream, vanilla cream, fig jam, coffee cream, raspberry cream, etc.
